Tamale Turkey Pie
Sprinkle and Cook - Minette's Chicken and Turkey Gourmet Dry Marinade
We always have left over turkey from our Christmas dinner, what better way to use that turkey? Our delicious tamale turkey pie will leave you wanting to share the recipe with your friends. Perfect for the winter evenings.
Ingredients - Topping
1 1/2 cups cups yellow cornmeal
1/2 cup all purpose flour
Himalayan salt
1 1/2 teaspoons baking powder
3/4 cup buttermilk
5/ 12 tablespoons unsalted butter, melted
2 large free range eggs (lightly beaten)
3/4 teaspoons of baking soda
6 oz of grated cheddar cheese
Filling
1lb left over turkey
Season with our Minette Chicken and Turkey Dry Marinade ( simply sprinkle)
1/2 diced tomatoe
1/2 chopped cilantro
Chili peppers (optional)
Add garlic if required
Method
Preheat oven to 400 degrees F. Prepare cornbread base. Pour into a large cast iron skillet and bake for 25 minutes (occasionally checking) or until golden brown on top. Let cool slightly while you prepare the turkey filling.
Remove the cornbread from tray and poke the surface with a fork. Pour your sauce from over the cornbread carefully. Now add your turkey mixture and simply top with your grated cheddar cheese. Cover with foil and bake until cheese is melted (keep checking). Remove the foil and and broil until the cheese begins to brown.
Let stand for 10 minutes before serving. Serve with vegetables or salad.
