2 kg bottom roast beef or round tip roast beef
1 medium red onion
3 cloves of crushed garlic
I bunch of parsley, rosemary

Make sure the beef is at room temperature before you cook it so let it sit for at least 35 minutes after you remove from the fridge.
Preheat oven to Gas 6/400F. Cut your onion into fine cubes, I like to grind them in the mortar with the garlic, until it becomes a paste.
Place the beef on the baking tray (drizzle some oil before you add the beef).
Rub the onion and garlic onto the beef and sprinkle with our Minettes Gourmet
Dry Marinade (steak and beef). Rub gently. Add rosemary and parsley.
Make small slits in the beef to make sure the seasoning soaks through to the beef (it will be worth it!).
Cover with foil. Cook for one hour and thirty minutes for well done beef and one hour for medium.
Keep checking every fifteen minutes and baste when needed so those juices from our delicious Minettes Gourmet Dry Marinades reach deep into the beef.
When the beef is cooked to your liking remove from the oven, and place on the side for five minutes. Drain the juices from this delicious to make your gravy.
